Beef Bresaola or Bresaola Punta d'Anca (top of hip on topside) is the leanest, tenderest part of the beef. This producer is based in the heart of the mountain part of Valtellina. Drizzle with lemon and olive oil, top with shredded carrots and mushrooms and a sprinkle of Parmesan.
