We support craftsmen who are passionate about what they produce. For generations we have found independent farmers and family run businesses throughout Italy and Japan and will never source from large corporations. Relationships are at the heart of our business, and we have been working with most of our producers for decades. They are now our best friends!
We are always on the lookout for food heroes who take pride in their artwork and produce the best in their region. Franco (one of my cheese producers) has worked by my side seeking micro producers and cheese makers in the Alps between Italy and France since the very beginning of Vallebona. I call him my cheese mentor. Another great example is Giacomo, our steak and sausage supplier is the 4th generation of a family butchers creating the best Finocchiona and fennel sausages throughout Tuscany.
