Unpasteurised cows cheese from Langhe in Piedmont. Coated and aged in oak barrels then pressed with fresh nebbiolo grapes. Nebiolo is the king of the Piedmont grapes and is where the best Barolo and Barbaresco wines hail from. The texture is firm and the flavour is full and robust.
