Crema di Castelmagno

Castelmagno is one of Italy's oldest cheeses that can trace back its origins to the 1200's in the now province of Cuneo. Wheels of it were once used to pay landowners for the grazing rights for the herds. Try this as a crudite or as a sauce for pasta. Add a little mild or double cream to the Castelmagno paste, stir into cooked pene and drizzle with white truffle oil - yum! 130g
