Scamorza Affumicata
Traditionally cinched at the top with a string, scamorza acquires a characteristic money bag shape. Smoked scamorza is made by hanging fresh scamorza and smoking it until its skin is light brown and the flesh takes on a woodsy, smoked aroma. A soft and flavourful cheese, try this with crisp bread and fruit marmalades, or in a rice or pasta salad. (400g or 1/2 a Scarmorza)
