Moro di Bufala on Vallebona

Moro di Bufala

This rare and unusual unpasteurised buffalo cheese comes from the Molise region next to Lazio and Campania. The texture is hard and crumbles like an aged pecorino but has a very delicate and lasting aftertaste. This cheese is aged for 5 to 8 months in an underground cave below a countryside mansion house. 200g approx.
