Palermo has a long standing tradition for producing fine Blue Fin Tuna. A completely different culinary experience, this tuna steak has a genuinely unique taste and colour and is a fine delicacy in Sardinia quite unlike tinned tuna across the rest of Europe. Eat alone with a tomato salad. Spicy anchovies from Calabria are whole fish and are marinated with chillies and fennel seed - a real delicacy. Try them in salads or as an attractive canapé by piercing on a stick in an S shape.
