Prosciutto di Capra is cured goat. This a Sardinian produced speciality made from boneless goat leg which is very unusual, especially here in the UK. Cured for 4/5 months, this delicacy is rolled in aniseed, herbs, spices and pepper. Try this with wild thistles or other Sardinian vegetables.
