This unusual and unpasteurised buffalo cheese comes from the Molise region close to Lazio and Campania. The texture is hard and the cheese crumbles like an aged pecorino but has a very delicate and lasting aftertaste. This cheese is aged for 5 to 8 months in a cave beneath a rustic mansion house.
